French Pastel orange Recipe

Ingredients:

18 grs. sugar
2 tablespoons sugar

Separate the yolks from clear.

Whisk egg yolks with sugar until frothy.

Wash oranges in hot water, grated rind and mix with flour, cornstarch and baking powder, then add to the yolks.

Beat the egg whites until stiff and mix with pasta and melted butter.

Preheat oven to 180 º C, grease the base of the mold, covered with greaseproof paper, spread it with butter and sprinkle the chopped almonds.

Fill the pan with the dough and smooth it.

Bake the cake after 50 minutes and let stand for 10 minutes with the oven off.

Pass the orange juice through a sieve, mix with lemon and sugar and boil the mixture.

Turn and remove as much paper.

Prick the cake with a toothpick and distribute the juice on top.

Also spread over the icing sugar just before serving.
