Ingredients for cook Chocolate cake and strawberries
Eggs 6
300 g sugar
1 tsp vanilla essence
0000 250 g flour
50g bitter cocoa
Chocolate Mousse
250 g dark chocolate
Butter 100 g
100 g sugar
Water 200 cc
CLARA 4
Cream 200 ml
Strawberry 500 g
Procedure for cook Chocolate cake and strawberries
Whisk the eggs point to point with the sugar. Add vanilla essence.
In wrapped, add the flour and sifted cocoa.
Place in a square pan 25 x 25 inch greased and floured. Cook for 30 minutes at 180 º C. Allow to cool.
Chocolate Mousse
Melt the chocolate with the butter.
Make a syrup with water and sugar. Cook until it reaches soft ball point (118 º C). Beat the egg whites until stiff and incorporate into the syrup form of thread. Whisk until the mixture cools.
Whip the cream to half a point.
Join the chocolate meringue and add the cream envelopes movements.
Allow to cool.
Armed
Cut the sponge cake into 2 layers. Place half the filling over one layer of dough. Evenly distribute the berries reserving some for garnish. Cover with another layer of sponge cake and distribute the rest of the mousse. Remove to cool for 2 hours.
Garnish with fresh strawberries and chocolate curls.
