Ingredients:
2.5 kilos of beef tenderloin
2 carrots
1 stick of celery
2 sprigs parsley
2 cloves garlic
1 large onion, chopped
2 red peppers chopped
400 mm orange juice
5 tablespoons brandy
8 black peppercorns
3 tablespoons lard
100 milliliters cream
Herbs to taste
Salt to taste
Tie the tenderloin you do not lose their shape during cooking and put it in a bowl. Add all ingredients except butter and cream and marinate for 2 to 3 hours.
Then, drain and saute in a pan where there will be heated butter. When well browned, seasoning and put it into a source of grilling.
Add the solid ingredients of the marinade and half the liquid of the same and insert into oven preheated to 400 ° F (205 ° C) for 30 to 40 minutes depending on preferred doneness.
Next, remove the meat from the source, reserving the heat and go through the blender cooking sauce. If it is too thick, add the remaining liquid from the marinade, pour into a saucepan and simmer until the sauce is smooth.
Finally, add the cream and correct the seasoning if necessary. Cut the meat into slices and surround if desired, with a little sauce and garnish with orange peel strips. Serve the remaining sauce in separate container.
