Christmas Braid with apricots Recipe
Ingredients
Yeast 50 g
Milk 140 cc
0000 460 g flour
1 pinch salt
80 g cold butter
Eggs 2
Stuffing
Dried apricots, chopped 110 g
Orange juice 150 cc
Smyrna raisins from seedless 60 g
80 g butter
60 g brown sugar
Processed almonds 30 g
Blanched almonds, toasted and roughly chopped 60 g
Grated zest of 1 orange
Mass Procedure
Dissolve yeast in warm milk. Add 1 teaspoon sugar and a few tablespoons of flour into a paste. Being fermented. Process the flour with salt and butter. Add eggs and the first ferment. Joining the ingredients into a dough. Let weigh.
Stretching in a rectangle and cut 3 strips.
Stuffing
Boil the orange juice with dried apricots. Remove and add raisins. Strain, reserving the liquid.
Whisk in cream butter with brown sugar. Add almonds and chopped coarse processed. Incorporate dried apricots and raisins, add the zest. Mix well and divide the filling into four parts.
Armed
Place the filling in the center, all along, on each rectangle of dough, reserving a quarter of filling.
Wrap the filling with the dough, leaving the edges where they hit, down. Joining the three ends and braid. Place on a plate and tap stop.
Then paint with egg and sprinkle with the reserved filling. Bake for 25 minutes or until golden and firm. Brush with marmalade reduced when removing from oven.
Mounting
Reduce the reserved orange juice and brush her hair, to remove from the oven, before it gets cold.
